Bye Bye 2008 & Good Riddance

I took this picture today from my street as the last sun of 2008 set in Hawaii.  It was a nice sunset which is a bit ironic since 2008 was such crappy year for so many people myself inclided.  I lost my job a few months ago and while things are tough, I know I'm not alone.   Hoping 2009 will be better.

My last meal of 2008 you ask?  Poki & Beer.  What could be better.

2008: Good Bye & Good Ridance

A house up the street from me has this big star fruit tree in front of their house.  I guess they don't like the fruit because every year I always see them sitting on the ground rotting away.

I never pick fruit off someones tree... but these guys never eat them and I knew the fruit wouldn't be missed.

    No More Turkey

Finally finished off the turkey leftovers today by making turkey pot pie.  I used a slightly different recipe this time.

    As usual, not enough crust!

but still came out well I think...

    Rainbows

I saw a bunch of rainbows this afternoon in around my neighborhood this afternoon.

How come there is never a rainbow over my house... always the neighbors?

    NY Sucks

First time I have to root for a NY Team and they lose.  Lucky nachos are not enough and the Pats miss the playoffs at 11-5 even though several shittier teams (with less wins) make it in.  First time a team with 11 wins doesn't make it in since the 1985 Denver Broncos.   Oh well.  Needed something to cheer me up.

Quaker Oatmeal is something of a classic food in America and it happened to be on sale yesterday at the market.  Seeing it sitting on my counter gave me an idea: oatmeal cookies.

The dough is similar to the one used for chocolate chip cookies with the addition of oatmeal and cinnamon.  I made a batch with raisins and another with chocolate chips.

    The finals
They came out really well.  Almost made me forget about the Pats.  Almost.

    Lucky Turkey Nachos

The Patriots won their game against the Bills so as I got ready to watch the Jet/Dolphins, I decided to make some lucky turkey nachos.  We need the Jets to win or the Ravens to lose to make the playoffs.  Amazing that an 11-5 team might not make it.  Oh well.  Go Jets

    Day 2 of Turkey Leftovers

Decided to make some fried rice with part of the turkey leftovers.  I used carrots, Chinese cabbage, turkey, and egg.

    Koko Head Crater

Waymond is back for X-mas so I decided to drag him up Koko Head Crater for a hike.  I do this one all the time and am in pretty good shape due to my training... so Waymond was already at a disadvantage (even though I had already gone running in the morning).  Good news is that he made it up to the top.

    Cookies

My land lord invited me up for Christmas Day Dinner tonight so I decided to whip up some cookies to bring at the last min.  I’ve been using the same recipe for ages (from the back of the chocolate chips) and it always comes out fine.  I never understood why the cookies in Asia were so bad.  In general, I think Asian food is a lot better than western stuff... but the big and i mean BIG exception is baked goods.  Asian people just don't know how to bake.  Cookies, pies, brownies... they might look nice, but, never taste good.  Maybe they don't put enough sugar or butter in.  I am not sure.  Anyways, I am no expert baker but the cookies I make here at home are 10x better than anything a bakery in Singapore or Shanghai sells.

As I said... just use the recipe on the back of the chocolate chips.  It works every time.  Sometimes I like to add extras or change this a bit but tonight was straight chocolate chips. Nothing fancy.

    Good old cookie dough...

Like I said nothing fancy here.  So why can't those bakeries in Singapore & Shanghai do this?

    Holiday Dinner 2008

Back at Thanksgiving I actually bought two, yes two turkeys.  I never got to eat turkey when I was working overseas and since an 18 pound bird costs only $6 here at thanksgiving...I figured it was a good idea to buy an extra bird and freeze and freeze it for later.  Later arrived yesterday.

I also made stuffing, veges, and candied yams.  On the plus side, the turkey was great (I always cook upside down for the 75% of the time and then flip it right side up for the last hour or so.  This time tho... the stuffing got a tad soaked by the gravy which is why it looked a bit soggy.  I used less sugar for the yams since I am trying to be healthy and used more orange/lemon pulp.

    Thursday Night Dinner

No discount bento at the supermarket so I decided to make Eggplant Parmesan.

Slice up the eggplant then use egg to bread them.
Fry the slices in oil (or olive oil).
Once golden brown, dry the slices on some paper towel.
Put the eggplant on a cookie sheet and put some tomato sauce and cheese on top.  Into the oven for 5-10 mins.
    The result
    Tada

    Circuit

In addition to the interval training, i've also added the following circuit to my workout schedule. I hope it helps out on my situp and pushups.

  • Chest presses
  • Abdominal crunches
  • Push-ups
  • Hanging leg raises
  • Overhead triceps presses
  • Abdominal crunches on an exercise ball
  •

Plan to follow this up with a 2 or 3 mile run.

    Rain Rain

It rained a lot here last week.. and I mean a lot.  Our ocean is all brown and nasty now from the runoff.  I took the picture below when it was pouring.  This is all rain... not fog.  Interesting to compare to the pic on the right.

    Want to feel pain?

Wanna feel pain?  I started adding these interval workouts into my training schedule.  Man are they hard.

    From the Stew Smith website:

The Four mile track workout has worked for many military and short distance runners for years. This workout is basically interval training. Interval training means you run at a certain pace for a particular distance then increase the pace for a certain distance. The Four mile track workout is broken into 1/4 mile sprints and jogs and 1/8 mile sprints and jogs for a total of four miles. The workout goes as follows:

    4 Mile Track Work
    Jog - 1 mile in 7:00 - 8:00
    Three sets of:
Sprint-1/4 mile as fast as you can
    Jog - 1/4 mile in 1:45-2:00
    Six sets of:
    Sprint-1/8 mile
    Jog - 1/8 mile 1:00

Do this workout without walking to rest. The only rest you will receive is during your slower jogging pace. Try to catch your breath while you jog. Have fun with this one it is tough.

Another good speed workout is called REPEATS. Simply run a certain distance as fast as you can a specified number of times. This time you get to walk to recover and catch your breath before the next sprint. You can try one of the following distances for a challenging workout:

    MILE REPEATS - 1 mile x 3-4 (walk 1/2 mile in between) = 3-4 miles
    1/2 MILE REPEATS - 1/2 mile x 6 (walk 1/4 mile in between) = 3 miles
    1/4 MILE REPEATS - 1/4 mile repeats x 12 (walk 1/8 mile in between) = 3 miles
    1/8 MILE REPEATS - 1/8 mile repeat x 16 (walk 100 yds in between) = 2 miles

Finally, if you have not had enough, you can try mixing shorter jogs and sprints together for a longer period of time. This type of training is great for building the speed and endurance needed for any of the PFTs or 5 or 10K races. I call them SPRINT / JOGS. Simply run about 50 yards as fast as you can then jog 50 yards fairly slow in order to catch your breath. I like doing this one where telephone poles line the road so I can just sprint form one telephone pole then jog to the next.

    Sprint / Jogs
    50 yd sprint / 50 yd jog
    for 10, 20 , 30 minutes

    Cookies

I was bored the other night so I decided to make some cookies.

    More fish

Fist time I caught one of these.

    Stocks

The market has really taken a beating the past few months and my portfolio is no exception.  On the otherhand, I am doing a bit better on a % term.  As you can see, it is really just Citi that is killing me.  Keep in mind that the -51% for citi doesn't take into account dvds...which would give me back another $150 or so.

    Another day... another fish

Caught a bunch of stuff today.  Almost took this one home before deciding it was too small to bother.  It is called a Mongoose or Cigar Wrasse or Kupou Kupoupou in Hawaiian.

    More Fishing

Caught a bunch of stuff today.  Not sure what this was.. but I let him go.

I also caught this goat fish which turned into dinner.  Well, part of dinner.  It wasn't that big.  Cooked with soy sauce and ginger.
