February 15 Mashed Sweet PotatoesIn my quest to eat well, the sweet potato is proving to be a daily companion. Tonight I decided to part from my normal baked sweet potato and made mashed ones. I used this recipe from the food network with 1 change: I cut the amount of sugar and butter in 1/2. Gotta be healthy
Mashed Sweet PotatoesPrep Time: 10min Cook Time:20min Level: easy Serves:8 Ingredients
DirectionsBoil potatoes until tender, drain and reserve. Return the pot to the stove top over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash potatoes, banana, stock and sugar together until well combined. Season with nutmeg, salt, pepper and orange zest, to your taste. Mash to combine spices and serve.

February 14 V-Day WorkoutCredit ScoreI was getting my yearly free credit reports (something everyone should do) when I found this credit karma website that gives out your credit score for free. Credit scores are used by banks to determin what your interest rates will be on loans. In short, they are very very important. As you can see, my scores are pretty good. Woo hoo
February 12 Chicken Katsu!February 08 Sunday Workout: 3.3 Miles, Pushups, & RainbowsHappy Sunday. 4 more days until my test but only 2 more workout days since I will be taking Tuesday & Wednesday off to rest. For my morning workout I ran 3.3 miles (5.3km) finishing off with 44 pushups. Why 44 you ask? That is the number I need on Thursday to get 4 points. I didn't time the run but was working pretty hard and kept up a good speed. In the afternoon instead of going to the track I decided to try something different: Rainbows. Make sure you read the bottom of this post to see why I called theworkout rainbows. I live on a hill and my driveway is one of the steepest around. Walking up and down is always a good workout so I thought I'd try running it a few times.

At the bottom looking up: But alas, just running up and down my steep driveway isnt challenging enough so I added 10 pushups at the top. So the workout goes as follows: Run down to the bottom tag the trash can (kept at the base for weekly pickups), turn around then run up to the top and finally do 10 pushups. Do this 10 times and you have my workout. It was a lot of work although, not as impossible as I might have expected. Each lap took me about 1m19s give or take for a total time of 13m14s of sprints and 100 total pushups. When I finished it started to rain a bit and a big rainbow formed beyond where I had done the pushups... so I decided to call this workout Rainbows. I think it works. Here is the rainbow: I'll definitely do the rainbow workout again but might try 12 or 15 pushups to make it a tad harder.
Healthy DinnersSo i've been trying to eat healthy the past few weeks. Here are 2 of my recent dinners. See the comon themes? All in all I like these dinners but my food budget has doubled since I started eating this way. What can I say, eating healthy costs a lot more than costco pizza and $1 value meal double burgers do.

February 05 Faster Faster FasterI did a quick track workout today with a 1.5mile my main event. Total time was 10min39 seconds which is a nother improvement from my 11:11 last week. If I can get under 11min on my test I should be ok to pass.
