    Mid Week Dinner

I usually don't cook mid-week... but after getting my ass kicked by Tony in squash I needed something good.  Made 魚香茄子 (Spicy Eggplant) & Fried Chicken... oh.. can't forget the Taiwan Beer.  Good eats.

    Bud's

One thing I really miss about America is Ben & Jerry's and Hagandaz Ice Cream.  It is available here in Singapore... but it costs 4x what I use to pay in America.  I refuse to pay that.  I never had Bud's before I came here... it is not as good as the B&J/Hagz... but it is priced at a more reasonable 3 USD per pint.   I had some Lava Brownie tonight

    Dinner in KL

Went to Madam Kwan's in KL.  They have the same food one gets at the street market... but this is a sit down place.  Very nice inside and the food was great.

Back to the Quartz Ridge in Kuala Lumpur

Went to Kuala Lumpur because Vicky was swinging thru on a vacation.  Took her to the Quartz Ridge that I hiked a few months ago:

    Sunday Night Dinner

Big big big dinner tonight.   Main dish was 皇帝雞. Here is how I made it...
    IMG_1215IMG_1220IMG_1221
The brown stuff on the chicken are all the spices.
    IMG_1222IMG_1223IMG_1224
Then wrap up in plastic and then foil (im sure there is a more authentic way to do this.. anyone got pointers?).  This chicken was too big for my bamboo steamer so I had to use a big pan.

    IMG_1229IMG_1234
Tada.... 1.5 hours later.   It was really good.

Here are the other dishes from tonight:
    IMG_1226IMG_1228IMG_1230IMG_1232
I can't figure out why my eggplant turned this dark purple almost brown color.  Maybe they were a tad old?  Before I cooked them they were much brighter. The dish still tasted good.  Salt & peper shirmp, and a light Malay chicken cury.  Can you believe I made all this?

    Memories of Home

Missing home a lot these days so I decided to post some old pictures.  I didn't bother to sort these... people, places, my apartment... just a bunch of random pictures.

    BC Wins

Boston College beat Notre Dame 4-1 this morning Asia time winning our first Chapionship since my junior year.  The Red Sox also beat the Yankees (die die die) and the Celts won another mop up game before the playoffs start.  Sorry to say the B's lost in double OT to the Canadians.  Oh well.. can't win em all. Go BC!

    Saturday Night Dinner

Off to try a long hike tomorrow in Malaysia so I decided to cook tonight (sat) instead of Sunday.  I cooked something new this time... Emperor's Chicken (皇帝雞)which gave me a chance to try out my bamboo steam trays.  Take a look:

     IMG_1115IMG_1117IMG_1116

The chicken is wrapped up inside (sorry I should have taken a picture before I sealed it) and steamed for an hour or so.  I believe the traditional way to make this is outside in an open fire using leaves... anyways, you can see how mine came to be.  The final result is below:

    IMG_1125IMG_1126

Here is the rest of the nights cooking. I'm not sure why the dried peppers got so dark.  They didn't burn... but lost their dark red color.  Oh well.
